Ricardo is really Richard Holsten, but he’ll always be Ricardo to us. He works with pork and drives through red lights, as only a continental man could. And yes, no need to re-read, I did say Pork. In fact porky would probably be a better nickname for him but it just doesn’t fit his physique. I don’t know where he puts it, but he certainly drinks great wine and eats like his life depends on it.

Ricardo is a supreme cook and sausage maker. His favourites are the classico air dried Cacciatore, Bresaola & Cappicola. And then there’s the show stopper - BBQ sausages made purely from pork belly. Stop it....
