2008 Paolo & Bone Barbera Cabernet

Paolo and Bone is a partnership between Paul Bottin and myself . After five years of planning and a dozen years of dreaming, our small batch project has finally come to life.
The two wines which have made the grade for our first release are a Sangiovese Cabernet and a Barbera Cabernet.
We look for a distinct line through our wines, a little flesh on the mid-palate and a savoury tapered finish.
Every grape is handpicked and fermented in fine oak. Only the best barrels of wine made from each vintage make it into the Paolo & Bone label. A portion of grapes from the 2008 vintage were laid out on baskets for 10 to 14 days to air dry and raisin. The wine was then fermented in American Oak, before being aged in French Oak for 20 months.
After trials blending Barbera and Cabernet in 2007, Paul and I were confident we could produce a wine that would make the grade for our new label in 2008.
The Barbera grape produces lively acidity which makes the wine firm and fresh. McLaren Vale Cabernet gives the wine a backbone, along with a lush red currant and milk chocolate edge.
The 2008 Barbera Cabernet has layers of fragrant red fruits, raisins and cigar-box, along with a velvety feel and long, smooth finish.
The 2008 vintage is the debut release for Paolo and Bone. Only 140 cases were produced.
