2008 Cascabel ‘Roussanne Viognier'

This wine is a definitive diva to be sure. The grapes were clearly picked to preserve natural acidity and the mission has been well executed with the freshness and zest transported to the bottle. Just enough quietly-quietly fruit characters peak out from under the covers.

Then she goes, ‘it's already dinner time darling', but I just want more.

Really well done!

I found this really crisp and delicious. It wasn't brittle, but had enough guts to stand up to a chinese style braised pork belly with a chilli caramel and fennel slaw - a big ask!
